What Your Favorite Mexican Dish Says About You

I found this article in the July issue of the magazine, First for women.




It's no secret that I love LOOOOOOVE Mexican food.  It's my number one ethnic choice for meals out...or in....or wherever...I love it.




Naturally, I found this interesting.  I'm a sucker for all personality tests or studies or quizzes or any sort of those "self enlightening" things.  I'm a total dork like that.




So...what does your favorite Mexican dish say about you??




Is it QUESADILLAS




If it is...it means you are reliable

I've always been a sucker for tacos and taco salad...it's a toss up between those two as to which one is my favorite.

New Plan

I had an idea last night.


I want to start trying new recipes again.  This time...one a week.  That's my goal.


I'm eating healthier now.  I feel like I'm getting my life in a routine and things are more normal for me.  I can commit to trying one new recipe a week, right?


I'll post about them with changes I made or suggestions I would do for next time.  I think I'll share whether they are a fail or pass because my fail might be successful for you. 


I won't be taking my own pictures.  I barely have time to take pictures of my family, never mind putting my meals above them in priority.  What I plan on doing is using the picture from the site I got the recipe from and just giving them the credit.  There has to be pictures...I can't not post them...we eat with our eyes first.


I don't even entertain trying a recipe without a picture....I'm a visual person.


I've tried a couple off Pinterest lately, so I'm going to post about them soon.


Maybe I'll actually bring this blog back to life....


And if you're interested in sharing this blog with me, I'm still open to that idea!  I think it would be nice to have a couple of contributors...not just me.

Avocado Salad

This past weekend I had two fabulous girlfriends over...which meant...good food.  One of the things we made was the Avocado Salad from Tasty Kitchen....and by "we", I mean Tracey and Krista.


I have been wanting to try it for awhile, but was waiting for the right time.  This weekend was definitely the right time.


It was so refreshing and light...I enjoyed it.


They did make a couple of changes...

Instead of white wine vinegar, they went with balsamic...it was good, but I think I'd like to try the white wine next time.  I love balsamic vinegar but felt that maybe it was a bit too strong of a flavour that overpowered the dish...but that's just my opinion.

They used dried parsley instead of fresh because that's all I had.

Instead of leaving the avocado in the peel and adding the toppings, they made it like a salad, mixing it all together, and then adding it back into the shell.  I liked it that way....easy to eat.


Oh and want to know what I did with the leftovers?  Poached egg, homemade hollandaise sauce with the salad served on top...DELICIOUS!  It was so freakin good like that!

Why A Food Blog?



Where do I even start?


I love food.  I love eating food.  I love planning meals.  I love cooking.  I love reading cookbooks....I'll sit down on the couch and just flip through cookbooks for no reason.  I'm just starting to enjoy baking, but that is very new to me as most things don't turn out.  I, also, love the kitchen section in department or home stores.  I can spend way too much money and way too much time there.  Everything is so beautiful.


At the beginning of the year my brother-in-law convinced me to start blogging.  I started Her Beautiful Mess with the intentions of it being a completely random blog.


I've always loved photography and creating but as life has gone on, it's become more of a passion that I'm trying to get fully absorbed into.  I was finding I wanted to post all my photographs and digital creations on my blog and not do much else. I decided to start a photography blog.... Through Her Eyes so my other one wouldn't get saturated with photography.  I wanted Through Her Eyes as a place to showcase my pictures and somewhere that can focus on photography and designing.


Then as my overly addictive personality moved on, I found myself wanting to share more and more recipes and meal plans.  I didn't like where I was heading with what was suppose to be my "random" blog.  Again...it was getting saturated with food talk.  I decided to start this blog.


I love blogging.  I love food.  It really does make sense, doesn't it?


So here we are.


I'm planning on linking up all my recipes from my other blog in this one.  I, also, want to learn how I can post them so they are easy for you to print.
