Maple Yogurt Sauce

source

Okay....I dream of this.  I cannot tell a lie.  After I was done eating the waffles, I actually drank the leftovers...right from the bowl.  There is a small chance I even licked the bowl.  Oh my goodness....I'm in love.

I used the recipe on the site for waffles and they weren't a hit.  I'm not a waffle fan and so I thought they were fine, but the people I served it too thought something was off.  It could have been me and how I made them.  In the future, I'll keep searching for a perfect waffle recipe.

In the meantime...this is a must add to my breakfast sauces!

cinnamonspiceandeverythingnice rocked my world with this one..Thank you thank you thank you.

Idaho Sunrise

Okay, these aren't your super nutritional breakfast but they are creative and something different to serve up for your overnight guests.

My personal opinion....they weren't worth the work.

They were good, but the lazy cook in me would rather just make this skillet style.

If you're going for presentation and you want to impress...give 'er.

Instead of parsley, I went green onions....just how I roll....it paired well with the other fillings.

Check out My Fridge Food for the recipe.  Let me know if you try it and what you think.

Yogurt, Bananas & Chia Seeds

Need a quick and easy breakfast or snack?  It is actually so good you could have it as a dessert.  The best part is...it's healthy!!

I saw the picture on pinterest and it had a caption description, but the link was a dead end, so unfortunately I can't give credit to where credit is due.  If this is yours...please let me know so I can properly link you up.

All I did was greek yogurt (plain, no fat), sliced banana, chia seeds and honey.  It was perfect with the bit of crunch from the chia.  If you're not a fan of the crunch, just let the yogurt and seeds sit for a bit and they will soften up.

I'm not well educated on chia seeds, I just know they are super healthy.  I've used both dark and light seeds.  I'm not sure if there is nutritional difference and I haven't noticed a taste difference, but I use whatever I have on hand.

Any chia seed experts out there?

None the less...I dig em.  Throw them in smoothies, oatmeal, yogurt...wherever you can.  I've pinned a few recipes with chia seeds I'm excited to try.

Black Bean and Rice Stuffed Peppers

picture source same as recipe source

I recently had a girl's night at my house.  I was craving a Mexican fiesta, but didn't want to make something I always make...I wanted to try something new.

Enter...stuffed peppers.

Okay...these were so good and you know what....they were even better heated up as left overs for lunch a couple of days later.

When I made mine, I made way too much filling, so guess what us ladies made for breakfast the next morning...

That's right!  Breakfast burritos.  We put the filling in a large skillet and cracked in a bunch of eggs.  Then we heated up corn tortillas and cheese in another skillet, added the filling, some fresh salsa and guacamole...DELICIOUS!

So you get two meals out of one...who doesn't love that?

Go visit Simply Life for the recipe.

I did make some changes...of course, right?

- I used white basmati rice and cooked it in my rice cooker.

- I forgot to add the corn and lime juice

- I did broil step in the oven earlier in the day and when I went to take the skin off, it wasn't coming off as easy as it normally does, so I left it on.  Next time, I would skip this entire step

- Instead of doing mine in the oven, I bbq'd them....who doesn't love a good char?

That's it!

Enjoy!

Overnight Oatmeal

picture source same as recipe source

I've been having this as breakfast or lunch for the past month or so.  I love it!  Love love love it!  It's so easy and perfect for people who are in a rush in the morning.

I have tweaked it and made a few changes over time, but you can just follow the recipe and enjoy as weel.

I use soy, almond or coconut milk instead of cow milk.  I also add less yogurt than the recipe calls for and more milk.  I use a quart mason jar and I do measure the oats and chia seeds.  I add a heaping soup spoon of non fat greek yogurt, whatever fillings I want and fill the jar up with the milk.  Sometimes I used plain flavoured milk, sometimes vanilla and sometimes chocolate...whatever I'm feeling like or have.

Some flavour combos I love...

cinnamon, nutmeg, honey and fresh banana cut up
fresh apple chopped (but would like to try apple sauce), cinnamon and honey
frozen blueberry and vanilla
frozen raspberry and vanilla

I make it before going to bed and then when I'm frantically running around in the morning, I just have to grab it and go.  I eat it at my desk.  I'm always sad when I get to the bottom because it's soooo good...but very filling.

I love the versatility of it.  You could do whatever mix in's you like!

Thank you Pepper Lynn!  You've changed my breakfast habit!

Ham and Asparagus Crepes with Hollandaise Sauce

Okay so there is no real recipe for this.  I sort of made it up, I think.

I roasted my asparagus in the oven first.  You could also grill or boil it or however you like it.

I also made a basic crepe recipe, but omitted the sugar and the vanilla and added some grainy mustard to it.

Then I put some ham and aspargus in the crepe...

...rolled them and put seam side down in a baking dish...

....and sprinkled asiago cheese on top.  Next time I'd put the cheese in the crepe.

Baked it at 350 for about 15 or so minutes.  You just need to heat everything up all the way through and melt the cheese.

Then I made this hollandaise sauce and drizzled it on top just before serving.

Yum.  So good!

Delicious Eggs Benedict

A couple of years ago I had a version of this at ABC and I loved it.

I've thought of it many times, but have never done it at home.

Last weekend I decided it was time....I had all the ingredients, so why not?

First of all print this recipe to use for your hollandaise sauce....please don't buy those packages from the store...this is way better.  You won't go back after making this....it tastes like real restaurant hollandaise sauce...mmmmm....I love hollandaise sauce.

The only change I made was I added a bit extra lemon juice.  I hate spicy food, so I was a bit skeptic on adding the tabasco sauce, but I did it and it wasn't spicy at all.

You will want to make the sauce just before you would serve it because you want it warm, but if you heat it up, the eggs will cook.

Because I don't like waste, I used the whites to make the egg part of it.  I used a small omelet pan to cook them.  Beat them lightly with a fork and pour into the lightly greased frying pan.  I seasoned them with salt and pepper and made a plain egg white omelet.

On a plate put some fresh baby spinach, crumbled feta, warmed up ham, and your egg (because the omelet was way too much for me, I split it in half and used it for leftovers).  Then drizzle your hollandaise sauce over top.

That's it.  Easy and also impressive if you have guests.

I had leftovers so I "built" an omelet in some tupperware and heated it up the next day.  Yes...some of the egg yolk cooked, but it was actually okay...more than okay...it was still delicious.  You could leave the sauce off it, heat up everything else and just add the cold sauce...I don't know how it would taste, but you could try it.
